My special someone loves brunch. Therefore, WE BRUNCH SO HARD.
Listen, I’m not a big breakfast guy. BUT, my wife is a big breakfast gal. I will do brunch. I will CRUSH brunch. It just needs to be after 11AM. I LOVE coffee, though. IT’S SO GOOD. Just, probably not on an empty stomach. I totally do that. Oh well… Anyway, my wife loves eggs. I can do eggs, but they need to be loaded with “goodies”. So, I thought to myself, “How can I make this work for the both of us?” If brunch isn’t going down on a Saturday, it sure as hell is on Sunday… LIGHT BULB.
Egg & Cheese Sausage Muffins are the perfect mix of egg, meat, and veggies. Duuuuude, they are so easy to make. These will literally take minimal effort and you will look like a breakfast beast in the kitchen. All you need is a muffin tray, cooking spray, breakfast sausage, a carton of eggs, milk, your favorite cheese, grape tomatoes, spinach, salt and pepper. Easy peasy! Egg & Cheese Sausage Muffins
10 Extra Large Eggs (enough for 12 Muffins)
1/2 Cup Milk
1 Pack of Breakfast Sausage Patties (cooked and chopped)
1/2 Cup of Cheese (your choice)
12 Leaves of Spinach
6 Grape Tomatoes (halved “length-wise”)
Salt & Pepper to Taste
Paprika (optional - see step 5)
Preheat your oven to 350 degrees. Spray the muffin tray (each spot)
Cut your sausage up into small chunks. On the stove top, cook them well, because you don’t want to serve raw meat!
In a large mixing bowl, whisk together egg, milk, salt & pepper
In each “muffin spot,” place a leaf of spinach, a half of grape tomato, a chunk or two of sausage, and a pinch of cheese
Pour evenly, your egg mix. You SHOULD have enough for all 12 spots. If not, that carton has 2 eggs left. Sometimes I like to top them off with a tap of Paprika!
Place in the oven for 20-25 minutes. (poke with a toothpick to make sure they are done)
Pull. Cool. Plate. EAT!
