WINTER IS SO REAL RIGHT NOW. I hate it…

How do you deal with this cold? How do you deal with this snow and sleet and freezing rain? YOU MOVE. But if you can’t move because of work, like me, then we need an alternative solution, right? CHILI!

I know! Chili won’t shovel your driveway. Chili won’t warm up your car. And Chili certainly won’t pay for your plane ticket to get the hell out of this misery! If someone submits a video of themselves defrosting their windshield with a hot batch of Chili, I will totally admit that I was wrong.

So, I’ve always liked Chili. You could maybe say love. However, my wife isn’t really into the traditional spicy beefy batch that Mom made after you hit the ramps in the backyard on a snow day from 9 to 5. All I know is that I found a way around that problem! Oh, babe, you like turkey? Oh, psh, you like pumpkin? Tomato? Black Beans? GOT IT. TURKEY PUMPKIN BLACK BEAN CHILI! I’m serious, this is the easiest recipe in the world. I’m exaggerating, but OMG it is simple.

I can literally make this Chili with my eyes closed. It is delicious. It is hearty. It is exactly what you need right now. And go figure! It could be the perfect gift! Imagine getting cookware for Valentines Day (lol). Just make sure you pair it with a card, flowers, chocolate, and love. Don’t say I didn’t warn you!

Recipe

Ingredients

1 lb Ground Turkey (1 pack)

1 Can Pumpkin

1 Can Fire Roasted Tomatoes

1 Can Black Beans

1 Cup Chicken Stock

1 Sprig Rosemary

1 Large Sweet Onion

2 Tablespoons Kosher Salt

1/2 Tablespoon Pepper

2 Tablespoons Olive Oil

1 Clove Garlic Chopped

Directions

  1. Heat large pot with olive oil

  2. Add Sliced Sweet Onion/Chopped Garlic/Rosemary

  3. Sauté Onion and Garlic on Medium Heat with Salt & Pepper

  4. Add Turkey Meat and Fully Cook

  5. Add Chicken Stock (make sure turkey meat is broken up)

  6. Add Pumpkin and Mix in evenly

  7. Add Black Beans & Tomato

  8. Mix Chili Evenly and Simmer on Low for 30 Min

  9. Remove Lid, Stir, Let Cool and Serve!
